The first thing you need to understand is the product you're selling, which is not food, music, or alcohol -you're selling a social experience. The social experience is the backbone and fundamental component of any successful restaurant or nightclub, contrary to the common misconception that product is based on following the latest trends, having the best food and service or hurling a barrage of miscellaneous ads and a great menue at the consumer.
For one thing, much has changed since the early 80's way of operating a restaurant or Supper Club. We're now dealing with a considerably more sophisticated consumer, and who also has an endless list of dinning and entertainment options. As these options continue to grow, so do the demands and level of expectation across the broad consumer spectrum.
