I am a 33 year old father of five. I have over 15 years of experience in cooking. I tried to go to culinary school 8 years ago and after taking their assessment test, was told I could not benefit from their program. The director told me I should be teaching the class because I knew more than the instructors. So even though I do not have a culinary certificate, I am more qualified than most people to cook, and it is all self taught. I create sauces from scratch with just what is in my head. I have thousands of creations running around up there at all times.
